4 scallions
400 milliliters apple cider vinegar
150 grams honey
3 Tbsps salt
8 Star anise
1 Tbsp Juniper berries
2 Tbsps Mustard seed

Preparation steps

1.

Peel and trim the cucumber. Halve lengthwise and cut into thick slices. Rinse, trim, and thinly slice the scallions.

Add the vinegar, 300 ml (approximately 10 ounces) of water, honey, salt, and spices to a saucepan. Bring to a boil, then add the cucumbers. Cook briefly, then remove with a skimmer and divide into prepared jars. Pour the hot cooking liquid over the cucumbers. Seal well and cool completely.

Let marinate for 4 weeks before using.
