Ingredients

For the dough
¼ cube Yeast
1 pinch sugar
220 grams Pastry flour
4 Tbsps olive oil
1 tsp salt
For the sauce
1 kilogram Tomatoes
1 Tbsp Tomato paste
1 shallot
1 garlic clove
2 Tbsps olive oil
300 grams Mozzarella
salt
freshly ground pepper
½ tsp dried oregano
2 Tbsps olive oil

Preparation steps

For the dough: Crumble the yeast into a bowl, then stir with about 100 ml (about 1/2 cup) of lukewarm water and the sugar until smooth. Add the flour, olive oil and salt and knead to a smooth dough. Cover and let rise in a warm place for about 1 hour.

Divide the dough into 2 balls over a lightly floured surface. Roll out the pizza to 22 cm (approximately 8-inch) rounds, letting the edge be slightly thicker for the crust. Place pizzas on a greased baking tray.

Blanch the tomatoes, peel, and chop. Peel the shallots and garlic and finely chop.

For the sauce: Heat 2 tablespoons of olive oil until hot. Sauté the shallots, garlic, tomatoes and tomato paste for about 5 minutes. Simmer the pizza sauce and season with oregano, salt and pepper. Spread the sauce evenly over the pizza dough, except for the crust. Cut mozzarella into thin slices to top on the pizza, then drizzle with a little olive oil.

Bake pizzas in a preheated oven at 225°C (approximately 425°F)  for about 15-20 minutes.  Serve immediately.
