Mackerel Spread with Chives

- 800 grams Mackerel (fresh)
- 2 shallots
- 1 carrot (small)
- 3 Tbsps scallions
- fish stock
- white wine
- 200 grams smoked Mackerel
- 120 grams butter (melted)
- 4 Tbsps olive oil
- salt
- freshly ground peppers
- lemon juice (freshly squeezed)
Preparation steps
Preheat oven to 150°C convection (approximately 300°F).
Peel and finely chop shallots and carrot. Rinse, trim and cut leeks crosswise into rings. Remove skin from mackerel fillets and place in a baking dish. Top with shallots, carrot and leeks. Drizzle with 4-5 tablespoons fish stock and 3 tablespoons white wine. Cover and bake about 30 minutes. Let cool. Separate mackerel fillets from bones. Break smoked mackerel into pieces and mix with fresh mackerel (reserve vegetables for another use).
Mix mackerel with 3 tablespoons cooking liquid from dish (use additional fish stock if necessary), melted butter, and oil. Season with salt, pepper and 1 tablespoon lemon juice. Puree mixture until smooth, and transfer to a ramekin. Stir in chives and refrigerate at least 24 hours before serving.
