- 3 cups Eggplant (cut into 0.5 cm slices)
- 3 cups zucchini (cut lengthways into strips 0.5 cm wide and 7 cm long)
- 10 cloves garlic cloves
- 2 cups olive oil (for topping up)
Preparation steps
1.
Grill the aubergines and courgettes on a hot barbecue for 3-4 minutes on each side.

Mix the garlic with the cooked vegetables. Spoon the lot into well-rinsed glasses and top up with enough olive oil to completely cover the vegetables. Seal well and store in a cool, dark place.
