- 600 grams Lentils
- 2 onions
- 4 carrots
- 200 grams Celery root
- 1 stalk Leeks
- 1 l water
- 1 cube Vegetable broth
- 1 bay leaf
- salt
- peppers
- 2 Tomatoes
- 2 Tbsps Red wine vinegar
- 2 Tbsps vegetable oil
- parsley (for garnishing)

Preparation steps

Rinse lentils in cold water and drain. Rinse and peel vegetables. Cut leek into small pieces, slice carrots and cut celery into small cubes. Chop onions. Heat oil in a saucepan and saute onions until translucent. Add vegetables and lentils, saute for a few minutes. Add water and bring to a boil, add vegetable stock cube and simmer on low heat for about 45-60 minutes or until lentils are tender.

Rinse tomatoes, remove stalks and cut into cubes.

At the end of cooking, add tomatoes to the soup and simmer for a few minutes.

Before serving, season with salt, pepper and red wine vinegar. Pour into bowls and serve.
