- 1 onion
- 150 grams marbled Bacon
- 150 grams Red Lentils
- 200 milliliters Chicken broth
- 200 milliliters Orange juice
- 1 handful Dandelion greens
- 1 handful cilantro
- 4 Tbsps White vinegar
- 1 Tbsp Peanut oil
- 3 Tbsps sunflower oil
- salt
- freshly ground peppers

Preparation steps

Peel onion and cut into strips. Cut bacon into thin slices first, then into strips. Combine lentils, onion strips and bacon with broth and orange juice and simmer, covered, for about 8-10 minutes on low heat. Strain through a fine sieve, collecting about 4-5 tablespoons of cooking liquid. Let cool to room temperature.

Rinse and shake dry dandelions and cilantro. Toss lentil salad with vinegar, cooking liquid and two oils, season with salt and pepper. Just before serving, fold in dandelions. Arrange salad on plates and garnish with cilantro. Serve immediately.
