- 1 onion
- 1 garlic clove
- 5 Tbsps olive oil
- 1 whole lemon (zested)
- 250 grams Arborio rice (Arborio)
- 150 milliliters white wine
- 600 milliliters Chicken broth
- 1 lemon (juiced)
- salt
- peppers (freshly ground)
- 4 King prawn (ready to cook)
- 1 tsp butter
- 1 Tbsp parsley (chopped)
- 3 Tbsps Parmesan (finely grated)

Preparation steps

Peel the onion and garlic and chop finely.
For the lemony risotto, heat 3 tablespoons oil in a saucepan and saute the onion, garlic and lemon zest over medium heat. Add in the rice, saute briefly and then pour in the wine. Bring to a boil, pour in the chicken broth and lemon juice and cook while stirring over medium heat. Add a little broth at intervals until thr risotto is cooked (al dente). Season with salt and pepper.

Cut the king prawns lengthwise. Heat the remaining oil in a pan and fry the king prawns until brown for about 4 minutes on each side.
Mix in the butter, parsley and Parmesan into the finished risotto. Serve the lemony risotto with fried king prawns in a bowl.
