- For the pastry
- 1 ¾ cups all-purpose flour (plus extra for dusting)
- ¼ cup sugar
- 1 tsp vanilla extract
- 1 pinch salt
- 5 Tbsps unsalted butter (chilled and diced)
- 1 egg yolk
- ¾ cup Limoncello (or water)
- For the filling
- 4 large, unwaked lemons
- 2 eggs
- 1 ¼ cups sugar
- 1 Tbsp Corn starch
- 2 cups Ricotta cheese
- 2 Tbsps powdered sugar (for dusting)

Preparation steps

Grease a 23cm|9" tart tin.

Mix together the flour, sugar, vanilla and salt in a mixing bowl. Add the butter and egg yolk and work the dough together by hand.

Gradually add the Limoncello, working into the dough. Continue adding the Limoncello until the dough can be shaped into a ball.

Place the dough on a lightly floured surface, and roll out until it is slightly larger than the tart tin. Gently ease the pastry into the tin, pressing the dough up the sides of the pan. Trim any excess dough and prick the bottom with a fork. Chill for 30 minutes.

Heat the oven to 180°C (160° fan) 350°F gas 4.

Zest two lemons and set the zest aside. Squeeze the juice from one of the zested lemons and set the juice aside.

Beat together the eggs, 175g|3/4 cup sugar and the cornflour. Stir in the ricotta and mix well. Add the lemon zest and juice, mixing to incorporate.

Pour the filling into the chilled pastry case. Bake for about 45 minutes until the filling is set and the pastry is golden. Remove from oven and allow to cool.

Thinly slice the remaining 2lemons, and cut the slices into quarters. Mix the remaining sugar with 10 tablespoons of water.

Pour into a frying pan and bring to a boil. Add the lemon slices; reduce the heat to a simmer and simmer the lemon slices for 5-6 minutes. Remove from the heat and cool.
11.
Place the sugared lemon slices on the tart before serving and dust with icing sugar.
