Mango Cheesecake Tarts

- 150 grams Caramel Cookie
- 60 grams melted butter
- 5 sheets gelatin
- 100 grams Mango puree
- 200 grams Quark
- 100 grams Double cream cheese (60-75% fat)
- 100 grams sugar
- 1 Tbsp lemon juice
- 125 grams Whipped cream
- 1 ripened Mango
- 1 generous pinch ground Cardamom (or cinnamon)
Preparation steps
Crush the cookies in a blender and then knead in the butter. Put 6 dessert rings (8 cm or approximately 3 inches) on a cake plate. Spread the biscuit mixture to form a base for each and press down evenly. Chill in the refrigerator.
Soften the gelatin in cold water. Mix in mango puree, quark and cream cheese. Add the sugar and lemon juice.
Whip the cream. Place the gelatine in a small pot and dissolve. Stir in 2 tablespoons of mango cream, then beat the gelatin cream with the remaining mango cream. Fill the rings with the mango cream, cover with plastic wrap and chill at least 4 hours.
Remove the tarts from the molds. Peel the mango, cut the flesh from the core and then slice into slivers. Decorate the tarts with the mango slivers. Sprinkle with cardamom or cinnamon.
