500 grams Leeks (white and light green parts)
2 Tbsps butter
1 tsp granulated Broth
3 Tomatoes
2 smoked trout
2 Tbsps Vinegar
3 Tbsps Corn oil
salt
freshly ground peppers

Preparation steps

1.

Rinse leeks and cut into rings. Heat butter in a pan and saute leeks for a few minutes. Add granulated broth and 1 cup of water, season with salt and pepper and simmer, covered, for about 7 minutes. Drain leeks in a colander and let cool.

Blanch tomatoes in hot water for a few seconds, peel, quarter and remove seeds, cut into small cubes.

Tear fish into bite-sized pieces.

4.

Whisk oil with vinegar and season with salt and pepper. Toss dressing with leeks and tomatoes, add fish and arrange on plates. Serve.
