150 grams Quark (drained)
200 milliliters Whipped cream
1 pkg whipped cream stabilizer
30 grams powdered sugar
2 Tbsps lemon juice
5 egg whites
1 tsp lemon juice
250 grams sugar

Preparation steps

For the meringues: Step 1

In a bowl, beat the egg whites until stiff. Stir in the lemon juice. Continue beating, while adding the sugar 1 spoonful at a time, until the mixture is very stiffy and glossy.

Place the meringue in a pastry bag fitted with a large tip. Pipe 2 large circles on a parchment-lined baking sheet by starting from the outside and spiraling inward.

Bake in a 100°C (approximately 210°F) convection oven until dry, about 1 hour.

Remove and let cool.

For the berry cream: Trim and rinse the berries. Reserve some berries for garnish.

In a bowl, coarsely mash the berries with a fork. Stir in the quark cheese.

In a bowl, whip the cream with the powdered sugar, cream stabilizer and lemon juice until stiff. Gently fold the berry mixture into the cream.

For assembling: Step 7

Place 1 meringue on a plate. Spread half the berry cream on top. Place another meringue on top and spread with the remaining cream.

Garnish with the reserved whole berries and serve immediately. Use an electric knife or very sharp knife to cut into wedges.
