Latin-style Tomato and Pepper Omelette

In a large bowl, whisk the eggs until well mixed and season with adobo. Stir in the onions, tomato, green pepper and cilantro.
Coat a large skillet with cooking spray and heat over medium heat. Pour in the egg mixture and sprinkle the cheese on top.
Cook for about 6 minutes or until beginning to set. Using a spatula, lift half of the omelet and fold over other half. Cook for another few minutes until the omelet is well sealed and cooked through. Garnish with cilantro if desired and serve.
