- 8 garlic cloves
- 1 handful Basil
- 50 milliliters mild olive oil
- 40 grams Pine nuts
- 40 grams grated Parmesan
- 500 grams Lamb shoulder (boneless)
- salt
- freshly ground Steak seasoning
- 2 Tbsps sunflower oil
- 2 Tbsps Mustard
- 30 grams chopped Peanuts

Preparation steps
1.
Peel garlic and cut into quarters. Rinse basil and shake dry. Process together with 2 cloves of garlic, olive oil, pine nuts and Parmesan in a blender to make pesto.

Cut lamb shoulder into 4 equal slices. Season with salt and pepper and cover with remaining garlic. Roll up and secure with toothpicks.
3.
Heat sunflower oil in a pan and brown lamb rolls on all sides. Spread with mustard, season with salt and pepper and top with peanuts. Arrange in a baking dish and roast in preheated oven at 230°C (approximately 450°F) for about 15-20 minutes.
4.
Remove toothpicks from the rolls and arrange on plates. Spread with pesto and serve. If desired, can be served with pasta with freshly grated parmesan.
