Ingredients

For the turkey
8 Turkey cutlets (about 80 grams each)
8 slices Bacon

Preparation steps

For the pesto, toast pine nuts slowly fry in a dry pan. Remove and let cool. Rinse the basil, shake dry and pluck off the leaves. Combine peeled garlic clove, a little salt and pine nuts in a mortar. and crush Add basil and grind well. Pour in finely grated Parmesan and grind thoroughly. Gradually incorporate oil until a thick pesto forms. Season with salt.

For the turkey, rinse the turkey cutlets, pat dry and pound flat. Brush with the pesto and roll. Wrap each with 1 slice bacon, secure with toothpicks and season with pepper. Brown in hot oil until golden brown on all sides, 5-6 minutes.
