19 ozs lean Ground lamb
3 cloves garlic cloves (peeled and crushed)
1 ½ Tbsps all-purpose flour
2 Tbsps finely chopped parsley
2 Tbsps good-quality olive oil
2 tsps ground Cumin
2 tsps ground cinnamon
1 Tbsp ground cilantro
1 egg (lightly beaten)
salt (to taste)
freshly ground Black pepper (to taste)
8 wooden Skewer (soaked in water for 20 minutes)
1 crusty Baguette split lengthwise (may substitute bread of your choosing)
1 handful Baby greens (rinsed and dried)
1 small, english Cucumber (rinsed and thinly sliced)
4 slices Swiss cheese
¼ cup plain Yogurt (optional)
1 Tbsp freshly squeezed lemon juice (optional)

Preparation steps

Preheat grill or broiler to medium-high heat.

In a large bowl, combine ground lamb, garlic, flour, parsley, olive oil, cumin, cinnamon, coriander and egg. Mix to incorporate. Season to taste with salt and pepper.

With clean hands, shape the lamb mixture into longish kebabs and thread onto the wooden skewers. Arrange greens, sliced cucumber and Swiss cheese on the bottom half of the baguette. Using a sharp knife slice the baguette into four portions. Place two kebabs in each sandwich.

In a small bowl, combine yogurt and lemon juice. Drizzle yogurt dressing over the kebabs, if desired and top with remaining bread. Serve sandwich style.
