- 1 tsp freshly grated ginger
- 6 garlic cloves
- 6 Tbsps Peanut oil
- 8 Cardamom
- 3 centimeters Cinnamon stick
- 2 bay leaves
- 2 onions
- 800 grams lamb (Cut from the thigh into bite-size cubes)
- 1 tsp Cumin
- 1 tsp ground cilantro
- 1 generous pinch cayenne pepper
- 1 Tbsp sweet ground paprika
- 1 Tbsp Tomato paste

Preparation steps

Peel garlic, squeeze through a garlic press and mix with ginger. Heat the oil in a wide pan, add the cardamom, cinnamon and bay leaf and saute briefly. Working in batches, add the meat and saute until browned. Remove the meat with a slotted spoon.

Add the onion, garlic and ginger to the pan and saute briefly. Stir in the cumin, coriander, cayenne and paprika. Stir in the tomato paste and cook for a few minutes. Return the meat to the pan, season with salt and stir in 300 ml (approximately 10 1/2 ounces) of water, and bring to a boil. Reduce to a simmer, partially cover and simmer until the meat is tender, about 1 hour. Serve with rice.
