1 tsp dried thyme
4 cups lamb (leg meat, cut into bite-sized pieces)
2 Zucchini (sliced)
2 yellow Bell pepper (cut into wide strips)
2 Tbsps balsamic vinegar

Preparation steps

1.
Grind the garlic with a pinch of salt and mix together with the oil and thyme.

Thread the lamb, courgettes and peppers alternately onto skewers. Brush with the oil, season with salt and ground black pepper and grill on the barbecue for around 10 minutes, turning.
3.
Drizzle with balsamic vinegar and serve.
