Lamb and Vegetable Kebabs

- 600 grams lamb (from the leg without fat and sinews)
- 1 onion
- 2 garlic cloves
- 2 Tbsps chopped parsley
- 2 Tbsps lemon juice
- 2 tsps sweet ground paprika
- 2 tsps ground Cumin
- salt
- freshly ground peppers
- 4 Tbsps olive oil
- Bell pepper (1 green and red)
- 4 firm Tomatoes
- 4 chili peppers
Preparation steps
Cut the lamb into 2 cm (approximately 3/4-inch) cubes. Peel the onion and the garlic, finely chop the onion, squeeze the garlic through a garlic press. In a bowl, mix together the onion, garlic, parsley, lemon juice, paprika, cumin and oil, season with salt and pepper. Add the meat, toss to coat and refrigerate 4 hours.
Rinse the peppers, halve lengthwise, remove the seeds and white ribs and cut into 2 cm (approximately 3/4-inch) cubes. Rinse and quarter the tomatoes and halve crosswise. Rinse the chilies, slit lengthwise, remove the seeds and white ribs and cut into 2 cm (approximately 3/4-inch) pieces. Alternately thread the meat, peppers, tomatoes and chile pieces on skewers.
Heat the broiler and broil the skewers, turning them as they cook until the meat is cooked through and the vegetables are crisp-tender, about 15 minutes.
