50 grams raisins
50 milliliters Rum
500 grams Pastry flour
200 milliliters milk
50 grams sugar
100 grams butter
1 cube Yeast (around 1 1/2 oz)
2 eggs
100 grams almonds
100 grams Hazelnuts
butter (for greasing)
40 grams almonds
4 Tbsps Orange marmalade

Preparation steps

1.

Soak the raisins in rum. Sift the flour into a bowl and make a well in the middle. Combine the milk with the sugar, butter and yeast. Gently heat until lukewarm then pour into the well. Add eggs and mix until combined. Shape the dough into a ball, sprinkle with flour and let rise for 1 hour in a warm place.

Preheat the oven to 180°C (approximately 350°F).

Mix the rum raisins, almonds and hazelnuts into the dough. Grease a ring mold and sprinkle with the almonds. Add batter and bake for 45-50 minutes.

Let cake cool slightly then remove from pan and spread orange marmalade over top. Let cool and sprinkle with candied fruit, if desired.
