¾ cup caster sugar
1 ½ cups self-rising flour
3 eggs (beaten)
1 tsp vanilla extract
1 ¾ ozs white chocolate (grated)
For the decoration
12 small, waffle Ice cream cone
1 ¾ ozs Milk chocolate (melted)
1 ¾ ozs white chocolate (melted)
11 ozs assorted Chocolate candy
12 lemon jelly candy (cut into strips)
24 silver dragees
plain Chocolate frosting
1 ¾ ozs plain Dark chocolate (chopped)
1 Tbsp milk
2 Tbsps butter
0.333 cup powdered sugar
white chocolate icing
3 ½ ozs white chocolate (melted)
2 ½ Tbsps milk
cup powdered sugar

Preparation steps

Heat the oven to 180°C/160°C/350°F/gas 4. Line a 12 section muffin tin with fairy cake paper cases. Put all the cake ingredients into a bowl and beat with a hand-held electric mixer. Whisk for 1–2 minutes until light and fluffy. Divide the mixture evenly between the cases.

Bake in the oven for 18–20 minutes until risen and firm to the touch. Place on a wire rack to cool.

Take six of the ice cream cones and dip the tops of each one into the melted plain chocolate. Shake off the excess and place on a tray lined with baking parchment. Dip the remaining cones in the melted white chocolate in the same way. Leave to set.

To make the chocolate icing put the chocolate, milk and butter into a small pan and heat gently until melted. Remove from the heat and stir in the icing (confectioners') sugar. Spread the frosting over six of the cupcakes. Place a white chocolate cone on the cake for the clowns hat. Place on chocolate beans for mouth nose etc. Using a little of the icing stick two sliver balls onto the eyes and use two strips of lemon jelly sweets for eyebrows.

To make the white icing put the white chocolate and milk into a bowl over a pan of hot, but not boiling water. Heat until melted, stirring from time to time. Remove from the heat and stir in the icing (confectioners') sugar until smooth. Spread over the remaining six cakes. Place on the plain chocolate cones and decorate with chocolate beans as before.
