For the cupcakes
1 ½ cups all-purpose flour
½ cup caster sugar
2 tsps Baking powder
1 pinch salt
1 egg (beaten)
cup milk
¼ cup sunflower oil
1 tsp vanilla extract
For the icing
1 ⅔ cups powdered sugar
2 Tbsps lemon juice
water
To decorate
powdered sugar
snowflake Sugar decoration
12 Jelly fruits (cones)
cup white Sugar paste
blue Food coloring
red Food coloring
powdered sugar

Preparation steps

1.
For the cupcakes: heat the oven to 200°C (180° fan) 400°F gas 6. Place paper cases in a 12 hole bun tin.
2.
Sift the flour, sugar, baking powder and salt into a mixing bowl.
3.
Whisk together the egg, milk, oil and vanilla. Stir into the dry ingredients until combined.
4.
Spoon into the paper cases and bake for about 20 minutes until golden and risen. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.

For the icing: sift the icing sugar into a bowl and stir in the lemon juice until smooth. Beat in enough water to produce a thick coating consistency.
6.
Spread the icing on the cakes.
7.
To decorate: sprinkle pink sparkling sugar over the top part of the cakes, as in the photo and place a row of sugar snowflakes underneath.
8.
Place a jelly cone in the centre for the 'nose'.
9.
Cut off about 1/4 of the sugarpaste and knead in a few drops of blue food colouring.
10.
Knead a few drops of red colouring into the remaining sugarpaste.
11.
Roll out the blue sugarpaste on a surface lightly dusted with icing sugar and cut out 24 small rounds for the 'eyes'. Attach to the cakes.
12.
Repeat with the red sugarpaste, cutting out 60-72 small rounds for the mouth and attach to the cakes.
