- 1 large chicken (jointed and trimmed)
- 2 cups Pearl onion (blanched)
- 3 Tbsps balsamic vinegar
- 1 Tbsp soft light brown sugar

Suggested variation 1; add 2 tbsp honey and the juice of 1 orange to the slow cooker and stir well before cooking.
Suggested variation 2; add 150 g / 5 oz / 1 cup cooked chestnuts to the slow cooker before cooking for a nutty variation.
Preparation steps
1.
Rub the chicken pieces with the olive oil and season generously.
2.
Heat a large casserole dish over a moderate heat until hot and seal the chicken, in batches, until golden brown in colour all over. Transfer the sealed chicken to a slow cooker.
3.
Reduce the heat under the dish and add the butter. Saute the onions in the butter for 3-4 minutes, stirring occasionally.
4.
Deglaze the pan with the balsamic vinegar and sprinkle over the sugar.
5.
Spoon the contents of the dish into the slow cooker and cover with a lid. Cook on a medium setting for 5 hours until the chicken is cooked through.
6.
When the chicken is ready, spoon everything from the slow cooker back into a roasting dish for presentation.
7.
Garnish with the chopped chervil and sprigs of chervil leaves before serving.
