4 ½ ozs Digestive biscuit (crushed to crumbs)
0.333 cup butter (melted)
1 ⅔ cups cream cheese
½ cup caster sugar
1 tsp vanilla extract
cup cream (48% fat)
2 Tbsps hot water
2 tsps Powdered gelatine
3 ozs orange gelatin

Preparation steps

1.
Line the base and sides of a deep, 16cm x 26cm|7" x 11 tin with non-stick baking paper.
2.
Mix together the biscuit crumbs and butter and press into the base of the tin. Chill for 1 hour until firm.
3.
Beat together the cream cheese, sugar and vanilla until smooth. Gradually beat in the cream.
4.
Put the hot water into a small bowl. Sprinkle over the gelatine and stir until dissolved. Set aside to cool slightly.
5.
Beat the cooled gelatine into the cream mixture and pour over the base. Chill for 3-4 hours until set.
6.
Make the jelly, according to the packet instructions. Set aside to cool to room temperature. Pour into a shallow dish and chill for 2-3 hours until it starts to thicken.
7.
Pour the jelly over the cream mixture. Chill for a further 3 hours until the jelly is set.
8.
Cut into squares to serve.
