- For the base
- 7 Tbsps unsalted butter (melted)
- 1 ½ cups Chocolate Biscuit (cookie crumbs)
- 2 Tbsps sugar
- 1 pinch salt
- For the brownie
- ½ cup unsalted butter
- ⅔ cup plain Dark chocolate (70% cocoa solids, chopped)
- 1 ⅓ cups light brown sugar
- ¾ cup sugar
- 1 tsp vanilla extract
- ¼ tsp salt
- 4 large eggs
- 1 cup all-purpose flour
- For the topping
- 1 cup Chocolate chip
- 3 cups Marshmallow

Preparation steps
1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Line a 20cm|8" square tin with non-stick baking paper.

For the base: mix together the butter, crumbs, sugar and salt. Press into the base of the tin.

Bake for 15-20 minutes.

For the brownie: melt the chocolate and butter in a heatproof bowl over a pan of simmering (not boiling) water.

Remove from the heat and stir in the sugars, vanilla and salt. Beat well until smooth.

Add the eggs and beat vigorously until thick and glossy. Stir in the flour and mix until just incorporated.
7.
Pour over the baked crust. Bake for 30-40 minutes, until the top is set and a skewer inserted into the middle comes out almost clean. Remove from the oven.
8.
Heat the grill.
9.
Sprinkle the chocolate chips over the top. Arrange a thick layer of marshmallows on top of the brownie.
10.
Toast under the grill for 1-2 minutes until golden. Cool for a few minutes in the tin.
11.
Carefully remove from the tin and cut into 12 squares.
