- Chutney
- 2 shallots (finely chopped)
- 14 ozs Apple (peeled, cored and diced)
- 1 red chili pepper (seeds removed, finely chopped)
- 1 ⅓ cups Cider vinegar
- ¼ cup Apple juice
- bay leaves
- 1 stick cinnamon
- ½ cup Golden raisins
- ¾ cup light brown sugar
- salt
- peppers
- Sauce
- 35 ozs cooking Apple (peeled, cored and sliced)
- ½ cup sugar
- 1 Cinnamon stick (broken)
- 2 Tbsps water

Product recommendation
Wash the jars in hot soapy water, rinse well and put in a low oven to dry and become warm.
For chutney use vinegar proof lids, i. e. lined with plastic.

1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Immersion blender, 1 Citrus juicer, 1 deep bowl
Preparation steps
1.
Place all the ingredients in a large pan and bring to a boil. Reduce the heat and simmer for 20-25 minutes over medium heat. Remove the bay leaf.

Season the chutney and spoon into sterilised jars. Seal tightly and allow to cool. Store in the refrigerator and use within a few days.

Sauce: Put all the ingredients into a large pan. Cover and bring to a boil, over a medium heat.
4.
Cook for 5 minutes, stirring occasionally until the apples are fluffy. Leave to cool.
5.
Remove the cinnamon and put into a blender or food processor and blend until smooth.
6.
Pour into cold sterilised jars and seal tightly.
