1 organic lemon (zest)
300 grams Pastry flour
100 grams sugar
1 pinch salt
1 egg
200 grams cold butter
200 grams various Red currant jelly (Quince jelly etc.)

Preparation steps

1.

Mix the flour with the lemon zest and mound on the table or in a bowl. Make a well in the center. Add the sugar, salt, egg, and butter into the center. Mix all the ingredients until smooth. Wrap in plastic and chill for at least 1 hour.

Preheat the oven to 175°C (approximately 350°F). Line a baking tray with parchment paper.

Roll out the dough to about 3 mm (approximately 1/8 inch) thick on a floured surface. Cut out with different cutters to cookies of different sizes. In about half the cookies, cut out the center with different shapes. Place the cookies on the baking tray and bake for about 10 minutes.

4.

Cover the cookies without the hole with the various jams. Cover with the window cookies and press lightly.
