1 bunch Watercress
1 bunch Chives
½ cup Ricotta cheese
In addition
4 Turkey escalope
8 slices Bresaola
0.333 cup olive oil
salt

24 cherry Tomatoes

Preparation steps

1.
Finely chop the herbs and watercress. Mix together with the ricotta and season.
2.
Place the escalopes between 2 sheets of clingfilm and bat out 'til quite thin.
3.
Heat the olive oil divided between 2 pans and sear the escalopes for 2 minutes on each side.
4.
Remove from the heat, then spread on a little of the ricotta mix. Lay over a slice of braesola and a basil leaf, then roll up and secure with a toothpick.
5.
Halve the tomatoes and return to the pan with the escalopes. Cover with a lid and cook for another 3 minutes until the tomatoes have collapsed and the turkey is cooked through.
6.
Serve 2 per person with the tomatoes.
