- ⅜ cup warm, strong, black Coffee
- 6 Tbsps Coffee liqueur (or brandy)
- 20 Ladyfinger
- 1 ⅛ cups Mascarpone
- 4 eggs (separated)
- 4 Tbsps caster sugar
- 1 Tbsp cocoa powder

Preparation steps
1.
Mix the coffee with 2 tablespoons coffee liqueur or brandy. Dip the sponge fingers in the mixture and lay in a serving dish. Pour over any remaining coffee mixture.
2.
Beat together the mascarpone, egg yolks, sugar and remaining liqueur or brandy.
3.
Whisk the egg whites until stiff, but not dry and gently fold into the mascarpone mixture until blended. Spoon over the sponge fingers.
4.
Sift the cocoa over the top. Chill for at least 2 hours before serving.
