- 3 cups Walnut
- ¾ cup all-purpose flour
- ¼ cup cocoa powder
- 1 tsp ground cinnamon
- ½ tsp grated Nutmeg
- 1 tsp Mixed spice
- ¾ cup mixed Candied fruit (chopped)
- 1 cup finely chopped Candied fruit
- 3 ½ ozs Chocolate (70% cocoa solids, chopped)
- ⅜ cup clear honey
- ¾ cup caster sugar

1 Peeler, 1 Cutting board, 1 Knife, 1 Vegetable brush, 1 dünne Rubber gloves oder Einmalhandschuhe, 1 Measuring cups, 1 Small pot mit Deckel, 1 Wooden spoon, 1 Citrus juicer, 1 Tablespoon, 1 Mini food processor, 1 Immersion blender
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Line a 20 cm| 8" round cake tin with non-stick baking paper.

Toast the almonds and walnuts on a baking tray for 5 minutes. Set aside to cool, then chop roughly.

Place the nuts in a mixing bowl and sift in the flour, cocoa and spices. Stir in the candied fruits, peel and chocolate.

Heat the honey and sugar gently in a pan and cook over a low heat until the texture is 'rubbery' - not a syrup. Add to the dry ingredients and stir very thoroughly to combine. As the mixture cools you can do this with your hands.

Increase the oven temperatue to 190°C (170° fan) 375°F gas 5.

Press the mixture evenly into the tin. Bake for 20-30 minutes. The cake will remain flat and unrisen.
7.
Cool in the tin for 10 minutes, then place on a wire rack to cool completely. Sift over a thick layer of icing sugar.
