- For Italian Dressing
- 6 Tbsps olive oil
- 2 Tbsps white wine vinegar
- 2 Tbsps finely chopped, fresh parsley
- 2 cloves garlic cloves (peeled and pressed)
- 1 tsp dried Basil
- 1 pinch crushed Red pepper flakes
- 1 pinch dried oregano
- For Italian Sandwich
- 2 ripe Tomatoes (rinsed and sliced)
- 1 green Bell pepper (rinsed; cored and thinly sliced)
- 1 red Bell pepper rinsed; cored and thinly sliced (may substitute jarred roasted red peppers)
- 1 medium onion (peeled and thinly sliced)
- ½ cup sliced black olives
- 1 cup Dill Pickle (drained)
- 1 ½ cups sliced Capicola
- 1 ½ cups thinly sliced Salami
- ⅔ cup italian ham
- ½ cup sliced Mozzarella
- 1 cup sliced Provolone cheese
- 4 crusty, Italian, sandwich Rolls (split)
- salt (to taste)
- freshly ground Black pepper (to taste)
- wooden Toothpick (to secure sandwich)

For Italian Dressing:

In a small bowl, whisk together olive oil, vinegar, parsley, garlic, basil, red pepper flakes and oregano. Refrigerate for 1 hour.

To Assemble Sandwich:

Drizzle the cut side of each roll lightly with dressing. Layer ingredients evenly on the bottom half of each roll. Season to taste with salt and pepper; drizzle with remaining dressing. Top with remaining roll and secure with a wooden pick. Serve.
