red Bell pepper rinsed; cored and thinly sliced (may substitute jarred roasted red peppers)

medium onion (peeled and thinly sliced)

crusty, Italian, sandwich Rolls (split)

freshly ground Black pepper (to taste)
wooden Toothpick (to secure sandwich)

Preparation steps

For Italian Dressing:

In a small bowl, whisk together olive oil, vinegar, parsley, garlic, basil, red pepper flakes and oregano. Refrigerate for 1 hour.

To Assemble Sandwich:

Drizzle the cut side of each roll lightly with dressing. Layer ingredients evenly on the bottom half of each roll. Season to taste with salt and pepper; drizzle with remaining dressing. Top with remaining roll and secure with a wooden pick. Serve.
