- 4 Chicken breasts (halves)
- 8 large, Boston butter lettuce (or bib, leaves)
- 8 large roasted Red pepper (slices prepared)
- 16 ozs fresh Mozzarella (sliced)
- 4 Tbsps olive oil
- 4 Tuscan-style, sandwich Rolls
- salt (to taste)
- ground peppers (to taste)
Preparation steps
1.
Rinse the chicken under cold running water and pat dry with paper towels. Salt and pepper to taste. Set aside.
2.
Prepare the grill for indirect grilling and preheat to medium-high heat.

Grill chicken for 8-10 minutes on each site, remove from grill and set aside. A meat thermometer inserted into the center of the breast should register 170°F.
4.
Brush the interior of the sandwich rolls with olive oil and place oil-side down on the grill. Toast lightly. Remove from grill.
5.
Place two lettuce leaves on the roll. On top of the lettuce place the grilled chicken breast, two slices of prepared roasted red pepper and four slices of mozzarella. Drizzle with olive oil. Add salt and pepper to taste. Continue until all four sandwiches are complete. Serve.
