- ⅓ cup sunflower oil
- 1 tsp cloves
- ½ tsp ground cinnamon
- 4 shallots (chopped)
- 2 red, Thai chili peppers
- 2 inches fresh ginger (peeled and chopped)
- 2 Tbsps Macadamia Nuts
- 6 cups chuck steak (trimmed and cubed)
- 1 Tbsp Lime leaves
- 1 ½ cups Beef stock
- ⅔ cup Coconut milk
- cilantro (chopped)

- freshly ground peppers

Preparation steps
1.
Blend two tablespoons of oil with the cloves, cinnamon, shallots, chillies, ginger, Macadamia nuts, and seasoning in a food processor until smooth.

Heat a little of the remaining oil in a casserole dish set over a moderate heat until hot. Season the beef and seal in batches, using a little fresh oil each time, until golden all over.

Remove the beef from the dish and add the prepared spiced paste. Fry for 2 minutes before returning the beef to the dish.

Stir well and cover with the stock and coconut milk. Cook until simmering before transferring the contents of the dish to a slow cooker, tucking in the lime leaves as well.

Cover with a lid and cook on a low heat for 6 hours until the beef is very tender.

Remove the lid and cook on a high setting for 10-15 minutes until the gravy thickens. Season to taste with salt and pepper.
7.
Spoon into serving dishes and garnish with chopped parsley before serving.
