125 grams powdered sugar
lemons (zested)
1 egg
150 grams cold butter

125 grams powdered sugar
3 Tbsps lemon juice (or rum)
Food coloring

Preparation steps

1.

For the dough, mix the flour, powdered sugar and lemon zest on a clean work surface. Form a well in the center and pour in the egg. Chop the butter into small pieces and spread around the flour.

Chop the ingredients with a large knife and quickly knead into a smooth dough. Wrap the dough in plastic and chill for about 1 hour.

Preheat the oven to 180°C (approximately 350°F).

Line a baking sheet with parchment paper. Roll out the dough on a floured surface until about 4 mm (approximately 1/4 inch) thick.

Use cookie cutters to cut out Christmas shapes (such as Santa Claus, trees, presents, etc.). Place the cookies on the baking sheet.

Bake for about 10 minutes, until golden brown.

7.

Remove from the oven and cool on a wire rack.

8.

For the icing, mix the powdered sugar and lemon juice into a thick icing. Divide into portions and use food coloring to dye the icing.

9.

Spread the icing on the cookies and let dry. Decorate with sugar pearls, chocolate, etc. Let dry and serve.
