This delicious homemade soup is rich in protein thanks to the beans.

If you don't have black truffle, substitute with a drizzle of truffle oil instead.

2 Tbsps olive oil
1 onion (peeled and chopped)
2 cloves garlic cloves (peeled and sliced)
2 cups canned cannellini beans
2 cups canned Lima bean
2 cups canned Tomatoes
½ Savoy cabbage (shredded)
3 cups good vegetable stock
½ Tbsp freshly chopped rosemary
fresh black truffle (optional)
salt
peppers
¼ cup Parmesan (grated)

Preparation steps

1.
Heat the oil in a pan and saute the onion until soft.
2.
Add the garlic and beans, stir into the onions and cook for a minute before adding the tomatoes, cabbage and stock.
3.
Add the rosemary, truffles (if using), salt and pepper, mix together well and bring to a boil. Simmer for 10-12 minutes, until the cabbage is just cooked.
4.
Divide between 4 shallow dishes and sprinkle with Parmesan before serving.
