For the dough
200 grams Pastry flour
100 grams butter
1 egg
salt
For the filling
1 Beefsteak tomato
1 scallion
2 Tbsps mixed, chopped Fresh herbs
400 grams Cottage cheese
1 Tbsp grated Parmesan
½ bunch parsley
salt
peppers
Fat (for greasing)

Preparation steps

For the dough: Mix together flour, butter, salt and egg to form a dough. Wrap dough in foil and refrigerate for 30 minutes.divide the dough into 12 equal portions and shape into a boat. Place in greased ramekins, cover and refrigerate 1 hour more. Put beans in each dough boat and bake in a preheated 200°C (approximately 400°F) oven for 10. Remove from oven, discard beans and put dough boats on a wire rack to cool.

For the filling: Rinse and finely chop tomato. Rinse scallion, remove ends and thinly slice. Mix tomato and scallion with herbs, cottage cheese and parmesan. Season with salt and pepper. Pour filling into dough boats. Mince half the parsley and sprinkle on boats. Garnish with remaining parsley and serve.
