½ oz Chives (0.5 Bunch)

24 ozs Whole Grain Spelt Flour
4 ½ ozs carbonated mineral water
½ oz butter (1 TBSP.)
2 Tbsps olive oil
2 ¼ ozs Parmesan ( )

Preparation steps

1.

Wash herbs, shake dry and chop finely. Mix herbs together with eggs, salt and 1 pinch of freshly grated nutmeg. Stir in flour, add mineral water and whisk.

Beat dough very vigorously with a sturdy wooden spoon for about 5 minutes to get air under dough to form bubbles. Let dough rest for 5 minutes. If the dough runs tenaciously down the wooden spoon and does not break off in the process, it is perfect. Add a little water or flour if needed.

3.

Using a spaetzle press, press the dough in portions into boiling salted water. Cook the spaetzle in it for 2-3 minutes at low heat. Then remove with a skimmer, rinse and drain.

4.

Heat butter together with olive oil in a pan. Toss spaetzle in it for 3 minutes over medium heat. Grate Parmesan in shavings over the spaetzle.
