Healthy Nettle Broth with Garnish

- For the soup
- 5 cups young Nettle leaf
- 2 tablespoons butter
- 2 tablespoons flour
- 2 ½ cups milk
- 2 cloves garlic cloves
(Nettles lose their sting if you scald them in boiling water. )
Preheat the oven to 240°C (220° fan) | 475F | gas 9.
Wash and chop the nettles. Peel and roughly chop the garlic. Heat the butter and sweat the garlic, then add the nettles. Dust with flour and stir in the milk. Season to taste with salt and pepper and cook for a few minutes.
Thaw the puff pastry and roll out to a thickness of 0.5 cm | 0.25". Cut out crescent moon shapes and place on a baking tray lined with baking parchment.
Brush with beaten egg and sprinkle with grated cheese. Bake in the preheated oven for 6-8 minutes, or until golden brown. Serve the nettle soup with the hot puff pastries.
