- 2 cups frozen, chopped Kale (thawed and drained)
- 4 cloves garlic cloves (peeled and finely chopped)
- ⅔ cup butter
- 1 ⅔ cups flour
- 2 heaped Baking powder
- 2 eggs
- ⅞ cup Sour cream
- ½ tsp salt
- Muffin tin
- Fat (to grease the muffin tin)
- For the dip
- ⅞ cup Sour cream
- 1 generous pinch stock granule
- 2 Tbsps freshly cut Chives
- White pepper

Preparation steps

PREHEAT THE OVEN AND PREPARE THE TIN

Preheat the oven to 350°F. Grease the muffin tins.

MAKE THE MUFFIN MIXTURE:

Melt the butter and stir in the kale and chopped garlic. Mix the flour and baking powder. Mix the eggs with the sour cream, salt and butter mixture. Quickly stir in the flour and baking powder.

BAKE THE MUFFINS:

Divide the mixture between the holes of the muffin tin and bake in the preheated oven (middle shelf) for 25-30 minutes. Remove from the oven, leave to cool slightly and take out of the tins.

MAKE THE DIP:

Mix the sour cream with the chives and stock granules and season to taste with pepper.
