2 Parsnips
8 ozs Celery root
1 stalk Leeks
2 onions
1 bunch parsley
2 Tbsps salt

Preparation steps

Wash or peel and clean vegetables and herbs.

Finely grate the carrot, parsnip and celery. Cut leek into thin rings, onions into small cubes. Finely chop the herbs. Alternatively, chop everything in a mixer.

Mix the vegetables and herbs, spread them on two trays covered with baking paper and let them dry at 80°C / 175°F for about 3.5 hours. Keep the oven door open a little bit with a wooden spoon.

4.

Mix the completely dried vegetables with the salt and grind them finely in the blender according to the desired consistency. Then pour the instant vegetable stock into clean screw-top glasses. Store in a cool dry place.
