Healthy Chicken Caesar
Heat the oil in a frying pan (skillet) and fry the cubes of bread, stirring frequently, until golden brown on all sides. Remove from the pan, drain on kitchen paper and set aside.
Meanwhile, heat a greased griddle pan. Flatten the chicken breasts with a meat hammer or rolling pin, season with salt and pepper and grill in the pan for 3-4 minutes on each side or until cooked through.
Place the lettuce, tomatoes and sliced cucumber in serving bowls. Cut the chicken into chunks and add to the salad. Scatter over the bread croutons and Parmesan shavings and serve with the dressing alongside.
