- 3 sheets Puff pastry (225 g; frozen)
- 1 carrot
- 2 cups Cauliflower (in small florets)
- 2 cups Broccoli (in small florets)
- 3 eggs
- 1 cup Sour cream
- 1 pinch ground Nutmeg
- 4 Cocktail tomatoes
- 2 Tbsps Diced ham

Preparation steps
1.
Preheat the oven to 200°C (180 fan), 400°F, gas 6. Lay the puff pastry sheets side by side to thaw, then place on top of each other, roll out and use to line the buttered dish.

Peel and dice the carrot. Blanch the cauliflower and carrot in boiling, salted water for 5 minutes and the broccoli for 3 minutes. Drain, refresh in cold water and drain thoroughly.

Whisk the eggs with the sour cream and nutmeg. Season well. Put the cauliflower, broccoli and carrots into the pastry case and pour the egg mixture over. Halve the tomatoes and place on top of the quiche.
4.
Scatter with diced ham and bake for about 30 minutes or until the filling has set and the pastry is cooked through underneath.
