- 2 ⅓ cups ground Beef
- 2 Tbsps fresh Parmesan (grated)
- 2 Tbsps parsley (chopped)
- 1 onion (finely chopped)
- 1 egg
- salt (to taste)
- ½ tsp Black pepper
- 3 Tbsps breadcrumbs
- 1 bunch fresh Chives (to tie around rice papper)
- 2 Cucumber (peeled)
- 20 Rice paper (wontons)

Preparation steps
1.
In a large bowl combine beef, Parmesan cheese, parsley, onion, egg, salt and pepper. Blend bread crumbs into the meat mixture. Shape into 20 meatballs.

Heat olive oil in a large skillet. Fry meatballs in batches. Cook thoroughly, remove from heat and drain on a paper towel.

Slice cucumbers in twenty 1 inch round pieces - to use for base.

Prepare rice paper per package instructions. Place cooked meatball in the center of the rice paper. Tie with chive stem.
5.
Arrange round cucumber pieces on a platter. Insert a wooden or plastic toothpick in the center of the cucumber slice. Place rice paper covered meatball on the other end of the toothpick. Ghosts should look like they are floating - cucumber should not be visible. Serve.
