Even smarter

These small bites are extremely well rounded, containing protein from the meat, carbs form the breadcrumbs, and nutrients from the various greens.

You can also use ground turkey for lighter, more lean protein.

Preparation steps

1.
In a large bowl combine beef, Parmesan cheese, parsley, onion, egg, salt and pepper. Blend bread crumbs into the meat mixture. Shape into 20 meatballs.
2.
Heat olive oil in a large skillet. Fry meatballs in batches. Cook thoroughly, remove from heat and drain on a paper towel.
3.
Slice cucumbers in twenty 1 inch round pieces - to use for base.
4.
Prepare rice paper per package instructions. Place cooked meatball in the center of the rice paper. Tie with chive stem.
5.
Arrange round cucumber pieces on a platter. Insert a wooden or plastic toothpick in the center of the cucumber slice. Place rice paper covered meatball on the other end of the toothpick. Ghosts should look like they are floating - cucumber should not be visible. Serve.
