- 1 Haddock (whole, 1.2 kg)
- lemon juice (for drizzling)
- salt
- freshly ground peppers
- 75 grams breadcrumbs
- 50 grams butter
- 12 small shallots
- 1 ½ Tbsps honey
- 200 milliliters dry white wine
- 4 sprigs thyme

Preparation steps

Preheat the oven to 180°C (approximately 350°F). Rinse the fish, pat dry, drizzle with lemon juice and season with salt and pepper. Slightly coat in breadcrumbs and place on a baking sheet lined with parchment paper. Dot with butter flakes and roast for 40-45 minutes in preheated oven, turning once.

Peel the shallots and cook until golden brown in a pan with melted butter. Add the honey, allow to caramelize slightly and pour in the wine. Add the thyme and let simmer slightly. Serve with the fish on a plate.
