- 2 orange carrots
- 2 yellow carrots
- 3 handfuls Ground elder
- 1 onion
- 1 stalk Celery
- 2 Tbsps Canola oil
- 1 l Vegetable broth
- 1 tsp sugar
- 1 tsp medium-hot Mustard
- Turmeric
- salt
- freshly ground peppers
- freshly grated Nutmeg
Preparation steps

Peel the two types of carrots, quarter and cut into small cubes. Rinse the ground-elder, shake dry and chop. Peel the onion and finely chop. Rinse the celery and also finely dice.

Heat the oil in a saucepan and sweat the onion until soft. Add the carrots and sauté briefly then sprinkle with the sugar, caramelize slightly, add the celery and pour in the broth. Simmer gently for about 8 minutes Then add the ground-elder, cook 1-2 minutes and season the soup with mustard, turmeric, salt, pepper and nutmeg. Season to taste and serve.
