- For the burgers
- 6 Tbsps olive oil
- 1 carrot (finely chopped)
- 1 onion (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 14 ozs canned red Kidney beans (rinsed and drained)
- 2 cups Wholemeal breadcrumbs
- 2 tsps mild Chili powder
- 2 Tbsps tomato Ketchup
- 1 egg (beaten)
- salt
- peppers

Preparation steps
1.
Heat half the oil in a frying pan and gently cook the carrot, onion and garlic for about 5 minutes, until softened. Tip into a bowl.

Add the breadcrumbs, chilli powder, ketchup and egg and mix well to blend. Add the kidney beans and roughly mash together. Season to taste with salt and pepper and leave to cool a little.

Shape into patties and chill for 1 hour.

Heat the remaining oil in a frying pan and cook the burgers for 3-4 minutes on each side until golden.
5.
Split open the rolls and put the lettuce and tomatoes on the bases, then place the burgers on top. Add a fried egg and replace the tops of the rolls.
