2 Zucchini
salt

400 grams Feta
200 grams sun-dried Tomatoes (in oil)
12 Basil
3 Tbsps olive oil

Preparation steps

1.

Rinse basil leaves and pat dry. Rinse zucchini, cut off ends then slice lengthwise into 12 very uniform slices (3-4 mm or approximately 1/8 inch thick). Blanch in salted water, remove and pat dry. Season with salt and pepper and arrange on a platter.

2.

Cut feta into 12 pieces. Drain tomatoes and cut into wide strips. Place cheese, tomato and 1 basil leaf on the center of each zucchini slice.  Roll up and secure with a toothpick.

3.

Brush the rolls with olive oil and grill on all sides for about 5 minutes. Serve.
