- 2 Eggplant
- 2 Zucchini
- 2 Bell pepper (red and yellow)
- 2 Fennel bulb
- 2 onions
- 2 garlic cloves
- 1 tsp Lemon peel
- 2 Tbsps freshly chopped parsley
- 5 Tbsps olive oil
- Sea salt (and)
- freshly ground peppers
- 400 grams Scamorza
- 1 tsp fennel seeds
- 2 Tbsps chopped Walnut

Preparation steps
1.
Preheat a barbeque grill. Rinse and trim or peel the eggplant, zucchini, peppers, fennel and onion. Cut the peppers and fennel into strips and the remaining vegetables into slices. Peel the garlic and chop finely, then mix with the lemon zest, parsley and oil. Brush the vegetables on both sides with the flavored oil and season with salt and pepper. Grill for about 10 minutes, turning occasionally.

Remove the rind from the cheese and cut into slices. Place on a grill pan, sprinkle with the fennel seeds and walnuts and grill for about 5 minutes on each side. Serve the vegetables and cheese on a platter.
