Preparation steps

Rinse the zucchini and cut lengthwise into strips. Cut the eggplant into slices and salt lightly. Rinse the peppers, remove seeds and ribs and cut into strips. Peel the onions and cut into wedges. Peel the garlic cloves and cut into thin slices. Whisk together the mustard, soy sauce and sunflower oil and mix into the vegetables. Grill all vegetables and cheese slices in an aluminum grill pan on a hot grill about 7-10 minutes, turning occasionally.
