- 24 Scallop
- 4 Tbsps Lime juice
- 4 Tbsps olive oil
- 1 Tbsp chopped Sage
- salt
- freshly ground peppers
- 1 Tbsp sweet ground paprika
- 12 slices Smoked ham
- 24 Sage
- 24 tri-color Sage
- 30 grams butter
Preparation steps

Rinse the scallops and pat dry. Toss with the lime juice, oil, paprika and chopped sage. Season with salt and pepper. Let marinate for 20 minutes.

Cut the ham slices lengthwise and wrap each scallop in a slice of ham. Alternately thread a sage leaf with a scallop until there are a few of each on a skewer. Sear in a hot pan with butter until golden. Serve immediately.
