- 12 large Scallop (with coral)
- ½ cup butter (softened)
- 3 cloves garlic cloves (peeled and pressed)
- ½ Tbsp finely chopped, fresh parsley
- salt (to taste)
- freshly ground Black pepper (to taste)
Preparation steps
1.
Select fresh creamy pink, white or orange scallops with a sweet odor.

Prepare the grill for direct grilling, preheat to medium-high heat.
3.
Scrub the shells with a hard kitchen brush. Use a thin, dull knife to cut open each shell. Rinse to remove all the sand and grit and discard all the contents except the large white muscle and the coral roe connected to it. Pat dry.
4.
In a medium skillet, melt the butter and add the pressed garlic, sauté until the garlic is fragrant, do not burn. Add the parsley to this mixture. Spoon the garlic butter into the scallop shells, dividing equally among the shells. Season lightly with salt and pepper.
5.
Place scallops on the hot grill grate and cook for 3 to 5 minutes. Scallops are done as soon as they turn white and are no longer translucent. Do not over cook or the scallops will lose their flavor and become tough. Serve immediately.
